Method

Step by step

    Cook rice noodles according to package instructions.

    Fry curry paste in a pot with some oil for 2 minutes.

    Add coconut milk and broth.

    Add lemongrass (crushed), galangal and lime leaves.

    Simmer 20 minutes, then fish out aromatics.

    Slice chicken into strips and cook in broth 8 minutes.

    Add shrimp and steep 3 minutes.

    Season with lime juice and fish sauce.

    Distribute rice noodles in bowls, soup over.

    Top with tofu, sprouts, egg and cilantro.
