  • Hokkaido pumpkin
    200 g
  • Coconut milk
    100 ml
  • Tomatoes pureed

  • Onion

  • Garlic cloves

  • Ginger
    1 cm
  • Curry powder
    ½ tsp
  • Honey
    ½ tbsp
  • Thyme
    3 sprigs
  • Rosemary

Method

Step by step

    Cube pumpkin.

    Chop onion, garlic, ginger.

    Heat olive oil, sauté onions.

    Add spices, briefly toast.

    Add pumpkin.

    Pour in pureed tomatoes and coconut milk.

    Simmer about 20 min until pumpkin is soft.
