Knead flour, yeast, water and salt into smooth dough, let rise 1 hour.

Roll dough into a square.

Beat cold butter flat between parchment paper, place on dough.

Fold dough around butter like an envelope.

Roll dough into rectangle, sprinkle with 1/3 sugar.

Tour: fold in thirds, roll out, sprinkle with sugar, chill.

Repeat steps 5+6 two times.

Finally cut dough into squares, fold corners to center.

Place in greased molds, let rise 30 minutes.

Bake at 200°C 30 minutes until golden brown and caramelized, remove from molds immediately.
