  • Chicken thighs

  • Egg noodlesOr: Mie noodles
    100 g
  • Coconut milk
    200 ml
  • Curry paste 1 tbsp yellowOr: Curry paste red
    as needed
  • Turmeric
    ¼ tsp
  • Garlic cloves

  • Ginger
    ½ cm
  • ShallotsOr: Onions

  • Fish sauce
    ¾ tbsp
  • Mustard greens 25 g pickled
    as needed
  • Cilantro
    1 bunch
  • Chili oil
    ½ tbsp
  • Mustard greens 100 g pickled
    as needed
Method

Step by step

    Fry a quarter of the egg noodles in hot oil until crispy as topping, remove.

    Finely chop shallots and garlic.

  3. 3

    Heat remaining oil in a pot, toast curry paste with turmeric 2 minutes.

    Cube chicken, add and brown all around.

  5. 5

    Deglaze with coconut milk.

  6. 6

    Season with fish sauce and sugar.

    Simmer 30 minutes.

    Cook remaining egg noodles separately, drain.

  9. 9

    Distribute noodles in bowls, pour curry over.

  10. 10

    Top with cilantro, fried noodles, lime slices, shallots and mustard greens.
