- Egg noodlesOr: Mie noodles100 g
- Coconut milk200 ml
- Curry paste 1 tbsp yellowOr: Curry paste redas needed
- Turmeric¼ tsp
- Garlic cloves1 Stk
- Ginger½ cm

- Mustard greens 25 g pickledas needed
- Cilantro1 bunch
- Chili oil½ tbsp

Method
Step by step

Fry a quarter of the egg noodles in hot oil until crispy as topping, remove.

Finely chop shallots and garlic.

Heat remaining oil in a pot, toast curry paste with turmeric 2 minutes.

Cube chicken, add and brown all around.

Deglaze with coconut milk.

Season with fish sauce and sugar.

Simmer 30 minutes.

Cook remaining egg noodles separately, drain.

Distribute noodles in bowls, pour curry over.

Top with cilantro, fried noodles, lime slices, shallots and mustard greens.
