Ingredients
For 2 portions
- Lamb neckOr: Lamb shoulder¼ kg
- Potatoes waxy¼ kg
- Carrots1 Stk
- Onions1 Stk
- Leek1 stalk
- Bay leaves1 Stk
- Thyme¼ tsp
- Parsley1 bunch
- Stout 60 ml darkOr: Beeras needed
- Beef broth190 ml
- Butter10 g
- Iodized salt¼ tsp
- Pepper¼ tsp
- Worcestershire sauce¼ tbsp
Method
Step by step

Cut lamb into 4 cm cubes, salt and pepper.
- 2
Heat butter in a heavy braising pot.
- 3
Sear lamb on all sides and remove.
- 4
Slice onions into rings and sweat in pot until translucent.
- 5
Cut leek into thick rings and carrots into pieces, briefly sauté.

Deglaze with stout and broth, add Worcestershire sauce, bay and thyme.

Return lamb to pot, braise covered 60 minutes.

Cut potatoes into pieces and add 45 minutes before end.

Season with salt and pepper.

Serve sprinkled generously with parsley.
