Step by step

Toast tomatoes, onion and garlic in a dry pan.

Puree roasted vegetables with chili flakes, cumin, oregano, apple vinegar and a little broth.

Sear beef in a heavy pot.

Add pureed sauce, top up with broth, add bay and cinnamon.

Braise covered for 2.5 hours until meat falls apart.

Remove meat and shred.

Briefly dip tortillas in birria broth, fill with cheese, meat and chopped onion/cilantro.

Fry in pan 1–2 minutes per side until cheese melts.

Serve with lime and a small bowl of birria broth for dipping.
