Step by step

    Cut halloumi into 1 cm thick slices and pat dry.

    Toast pine nuts in a dry pan until golden.

    Whisk olive oil with lime juice, honey, thyme and pepper.

    Heat grill pan strongly.

    Grill halloumi slices 2 minutes per side until golden brown.

    Arrange arugula, tomato cubes, pomegranate seeds and mint on plates.

    Distribute halloumi on top.

    Drizzle with honey vinaigrette and sprinkle with pine nuts.
