Step by step

    Whisk soft butter with egg, salt, nutmeg and semolina into a smooth dough.

    Let rest in the fridge for 20 min.

    Heat broth in a pot.

    Cube carrots finely, slice leek into fine rings.

    Simmer carrots and leek in the broth for 5 min.

    Form small dumplings from the semolina dough with two teaspoons.

    Slip into the simmering broth.

    Steep over low heat for about 10 min.
