- Bell pepper1 Stk

- Cherry tomatoes65 g
- Feta sheep cheese50 g
- Olives25 g
- Olive oil1,5 tbsp
- Lemon juice1 tbsp
- Garlic cloves1 Stk
- Oregano½ tsp

- Parsley1 bunch
Method
Step by step

Cut potatoes into wedges, bell pepper into rough pieces, onions into wedges.

Halve cherry tomatoes.

Whisk marinade from olive oil, lemon juice, garlic, oregano, salt and pepper.

Combine chicken thighs and vegetables with the marinade.

Spread on a baking tray with parchment.

Roast at 200°C for about 40 min until golden, flip once.

Add cherry tomatoes and olives, bake another 10 min.

Crumble feta and sprinkle over the tray.

Sprinkle with parsley.
