  • Salmon fresh 0.25 kg one fillet
    as needed
  • Iodized salt 15 g coarse
    as needed
  • Sugar
    15 g
  • Pepper
    ¼ tsp
  • Dill
    1 bunch
  • Vodka
    5 ml
  • Sour cream
    15 g
  • Lime juiceOr: Lemon juice
    ¼ tbsp
Method

Step by step

    Check salmon for bones, remove with tweezers if needed.

    Mix salt, sugar and pepper.

    Coarsely chop dill.

    Place salmon skin-side down on a layer of cling film.

    Rub thickly with salt mixture.

    Cover generously with dill.

    Drizzle with vodka, wrap tightly in film.

    Place in a dish, place a board with weight on top.

    Refrigerate 48 hours, turning every 12 hours.

    Rinse salmon, pat dry, slice thinly, serve with mustard-dill sauce.
