Method

Step by step

    Trim and cube all vegetables.

    Slice leek into fine rings.

    Finely chop onion and garlic.

    Heat olive oil in a pot, sauté onion and garlic.

    Add carrots, celery, leek and potatoes and sauté 5 min.

    Top up with broth, add bay leaf and lovage.

    Simmer over medium heat for 30 min.

    Adjust with salt and pepper.

    Serve sprinkled with parsley.
