Method

Step by step

    Cube potatoes, carrots and celery.

    Slice leek into rings, finely chop onion and garlic.

    Heat olive oil in a large pot.

    Sauté onion and garlic.

    Add carrots, celery and leek and sauté 5 min.

    Add potatoes, pureed tomatoes and broth.

    Add bay leaf and thyme.

    Simmer over medium heat for 30 min.

    Adjust with salt and pepper.

    Serve sprinkled with parsley.
