Method

Step by step

    Slice zucchini, eggplant and tomatoes.

    Finely chop onion and garlic.

    Heat olive oil in a pan, sauté onion and garlic.

    Add pureed tomatoes, season with salt, pepper and oregano, simmer 5 min.

    Pour sauce into a baking dish.

    Arrange vegetable slices in a fan in the dish.

    Drizzle with olive oil, season with salt and pepper.

    Sprinkle with mozzarella and Parmesan.

    Bake at 180°C for about 35 min until golden.

    Serve sprinkled with basil.
