  • Buckwheat flour
    65 g
  • Water
    130 ml
  • Eggs
    1 Stk
  • Iodized salt
    ¼ tsp
  • Butter
    20 g
  • Cooked ham
    50 g
  • Eggs 1 pc for topping
    as needed
  • Emmentaler 50 g gratedOr: Gruyère

Method

Step by step

    Mix buckwheat flour with salt.

    Add water and egg and stir smooth.

    Rest batter 1 hour.

    Heat a non-stick pan (28 cm) and brush with a little butter.

    Pour a ladle of batter into the pan, swirl to spread thinly.

    Bake galette 2 minutes, flip.

  7. 7

    Top with ham, crack an egg in the center.

  8. 8

    Distribute cheese all around.

    Fold edges to the center so the egg remains visible.

  10. 10

    Continue baking covered 3–4 minutes until egg white is set, serve with chives.
