Step by step

Soak shiitake mushrooms in hot water for 30 minutes, drain and slice into strips.

Briefly soak glass noodles per package instructions, drain and cut into pieces.

Cut carrots and cabbage into fine strips.

Heat oil in a wok, brown mince until crumbly.

Briefly fry pressed garlic and ginger.

Stir-fry carrots, cabbage and mushrooms 4 minutes.

Add sprouts and glass noodles, season with soy sauce and sesame oil, let cool.

Lay out spring roll wrappers, place filling in the center.

Fold sides in, roll up tightly, seal seam with egg white.

Heat oil to 180°C, fry rolls 4 minutes until golden, serve with sweet chili sauce.
