  • Potatoes waxyOr: Potatoes floury
    ½ kg
  • Sunflower oil 0.5 l for frying
    as needed
  • Iodized salt
    ½ tsp
  • Mayonnaise
    50 g
  • Ketchup
    50 g
  • Curry powder
    ¼ tsp
  • Chives
    1 bunch
Method

Step by step

    Peel potatoes and cut into 1 cm thick sticks.

    Soak fries in cold water for 30 minutes, then dry well.

    Heat oil to 140°C.

    Pre-fry fries in batches 6 minutes, they should be soft but not yet brown.

    Drain on a rack.

    Heat oil to 180°C.

    Fry fries a second time 3–4 minutes until golden and crispy.

    Drain on paper towels, salt immediately.

  9. 9

    Serve with mayonnaise and curry-ketchup.
