Step by step

Preheat oven to 180°C.

Finely chop onion and garlic, dice zucchini, bell pepper and mushrooms.

Heat olive oil in an oven-proof pan.

Sauté onion and garlic translucent.

Fry mushrooms 4 minutes, add zucchini and bell pepper and fry another 5 minutes.

Add spinach and briefly wilt.

Whisk eggs with cream, parmesan, salt and pepper.

Pour egg mixture over the vegetables.

Let set over medium heat for 5 minutes.

Place pan in the oven and bake 12–15 minutes until center is set, serve sprinkled with basil.
