Method

Step by step

    Clean shrimp, season with salt and pepper.

    Heat 2 tbsp olive oil in a pan, fry shrimp with chopped garlic for about 3 min.

    Fillet oranges, reserving juice.

    Halve, pit and slice avocado into wedges.

    Wash lamb's lettuce and arugula and drain well.

    Whisk a dressing from remaining olive oil, lime juice, orange juice, honey, mustard, salt and pepper.

    Arrange salads, avocado and orange fillets on plates.

    Distribute shrimp on top.

    Sprinkle with pomegranate and walnuts.

    Drizzle with dressing.
