  • Egg whites

  • Butter

Method

Step by step

    Brown butter in a pot until golden (beurre noisette), let cool.

    Preheat oven to 200°C, grease financier molds.

    Mix almonds, powdered sugar, flour and salt.

    Whisk egg whites lightly until foamy, not stiff.

    Fold egg whites into the flour mixture.

    Stir in beurre noisette, vanilla and honey.

    Fill batter into the molds.

    Bake 12–15 minutes until golden brown.

    Unmold and let cool.
