Step by step

Toast fideos dry in a large paella pan with a little olive oil until golden, remove.

Heat remaining olive oil in the pan.

Finely chop onion, bell pepper and garlic and sauté for 5 minutes.

Dice tomatoes and add with paprika powder, simmer 5 minutes.

Add squid rings and fry 3 minutes.

Return fideos to the pan, top up with broth and saffron.

Simmer 10 minutes.

Place shrimp and mussels on the noodles and cook another 5 minutes until mussels open.

Sprinkle with parsley and serve with aioli.
