Method

Step by step

    Toast hazelnuts in a dry pan without fat.

    Roughly chop nuts.

    Very finely chop shallot.

    Whisk apple vinegar, mustard, honey, salt and pepper with the shallot.

    Slowly beat in olive oil and walnut oil.

    Fold in chopped hazelnuts.

    Pour over fresh lamb's lettuce.
