- Coconut milk100 ml
- Broth80 ml
- Soy sauce¾ tbsp
- Lime juice¾ tbsp
- Garlic cloves1 Stk

- Bell pepper1 Stk
- Carrots1 Stk
- Vegetable oil¾ tbsp
- Honey¼ tbsp
- Chili flakes¼ tsp

Step by step

Cube chicken breast.

Finely chop onion, garlic and ginger.

Slice bell pepper and carrots into strips.

Heat vegetable oil in a pot, fry chicken and remove.

Sauté onion, garlic and ginger in the same pot.

Add peanut butter, coconut milk and broth, stir until smooth.

Stir in soy sauce, lime juice, honey and chili flakes.

Add carrots and bell pepper, simmer 5 min.

Return chicken to the pot and let steep another 8 min.

Serve sprinkled with chopped peanuts and cilantro over rice.
