  • Egg yolks

  • Lime juiceOr: Lemon juice

  • Apple vinegar

  • Cayenne pepper

Method

Step by step

    Fry bacon crispy in a pan.

    Hollandaise: melt butter.

    Whisk egg yolks with lemon juice and 1 tbsp water over a water bath until creamy.

    Slowly stream in melted butter, season with salt and cayenne.

    Bring water to a simmer in a pot, add apple vinegar.

    Slide eggs individually into the water and poach for 3 minutes.

    Halve and toast English muffins.

    Top muffin halves with bacon.

    Place poached egg on top.

    Pour over hollandaise, garnish with pepper and chives.
