- Ginger½ cm
- Spring onions1 Stk
- Bok choyOr: Spinach50 g
- Rice vinegar½ tbsp
- Brown sugar¼ tsp
- Sunflower oil½ tbsp
- Peanuts 15 g choppedas needed
- Cilantro1 bunch
Step by step

Briefly toast Sichuan pepper in a dry pan and finely grind in a mortar.

Heat oil in a pan, brown mince until crumbly.

Season with 2 tbsp soy sauce and 1 tbsp rice vinegar, fry crispy.

Blanch bok choy in salt water for 1 minute.

Cook egg noodles per package instructions.

Sauce: stir sesame paste, remaining soy sauce, chili oil, remaining rice vinegar, pressed garlic, ginger, sugar and Sichuan pepper into bowls.

Place noodles on the sauce.

Top with mince, bok choy, spring onions, peanuts and cilantro.

Mix everything well before eating.
