- Brown sugar 15 g for caramelizingas needed

Step by step

Preheat oven to 150°C.
- 2
Cut vanilla pod lengthwise and scrape out the seeds.

Slowly warm cream with vanilla seeds and pod, do not boil.

Beat egg yolks with sugar and salt until pale and creamy.

Remove vanilla pod, slowly pour warm cream into the yolk mixture while stirring.

Fill cream into 6 oven-safe ramekins.

Place ramekins in a baking dish, pour boiling water halfway up.

Bake 45 minutes in the water bath, the center should still wobble slightly.

Chill at least 4 hours.

Before serving sprinkle with brown sugar and caramelize with a torch.
