- Baking soda¼ tsp
- Iodized salt¼ tsp

Step by step

Preheat oven to 200°C.

Line or grease a 20 cm square pan with parchment paper.

Mix cornmeal, flour, sugar, baking powder, baking soda and salt in a bowl.

In a second bowl whisk buttermilk, eggs and melted butter.

Briefly combine dry and wet ingredients, do not overmix.

Fold in corn kernels.

Pour batter into the pan and smooth.

Bake 25–30 minutes until golden brown, do toothpick test.

Cool 10 minutes in the pan, then turn out and cut into pieces.
