- Emmentaler1 slice
- Green asparagus3 Stk
- Eggs1 Stk
- Breadcrumbs40 g
- Wheat flour20 g
- Butter15 g

Step by step

Peel asparagus spears and trim woody ends, blanch in salted water 4 min.

Pound schnitzel flat, season with salt and pepper.

Place ham and cheese on top, lay 3 asparagus spears each on it.

Set out flour, beaten egg and breadcrumbs on plates.

Roll up schnitzel firmly and secure with toothpicks.

Bread rolls in flour, egg and breadcrumbs.

Heat butter and olive oil in a pan, sear rolls all over until golden.

Finish in the oven at 180°C for about 15 min.

Serve with lemon wedges.
