Step by step

Cut chicken breast horizontally to form a pocket.

Season with salt and pepper, insert 1 slice each of ham and cheese, secure with toothpicks.

Set out flour, beaten egg and breadcrumbs on plates.

Bread chicken first in flour, then egg and lastly breadcrumbs.

Slice zucchini, bell pepper and eggplant thickly, marinate with olive oil, salt, pepper and herbs.

Grill vegetables on a grill pan 3–4 min per side.

Heat butter and a little olive oil in a pan, fry cordon bleu 5–6 min per side until golden.

Serve with grilled vegetables.
