  • Fresh yeast
    1 Stk
  • Water
    20 ml
  • Olive oil
    ¼ tbsp
  • Pancetta
    15 g
  • Cranberries
    5 g
  • Salt
    ¼ tsp
  • Sugar
    ¼ tsp
  • Rosemary
    2 sprigs
  • Parsley
    1 bunch
Method

Step by step

    Dissolve yeast in lukewarm water with sugar.

    Knead flour, salt and yeast mixture into a smooth dough, work in olive oil.

    Let dough rise covered for 60 min.

    Cube pancetta finely and briefly render.

  5. 5

    Knead cranberries, pancetta, chopped rosemary and Parmesan into the dough.

    Distribute dough into 12 muffin tins.

  7. 7

    Let rise another 20 min.

  8. 8

    Bake at 200°C for about 20 min until golden.

    Serve lukewarm.
