Wash Chinese cabbage, halve, remove core and slice into fine strips.

Peel and cube mango.

Shave carrots into fine strips, slice spring onions into rings.

Toast cashew kernels in a pan without fat.

Mix a dressing from lime juice, honey, soy sauce, sesame oil, olive oil, grated ginger and chili flakes.

Combine Chinese cabbage, mango, carrots and spring onions.

Toss with dressing and serve sprinkled with cashews.
