Method

Step by step

    Halve chicory lengthwise, remove the hard core and slice into strips.

    Fillet oranges, reserving the juice.

    Toast walnut kernels in a pan without fat and roughly chop.

    Whisk a dressing from olive oil, walnut vinegar, mustard, honey, orange juice, salt and pepper.

    Combine chicory with orange fillets and dressing.

    Serve sprinkled with walnuts and parsley.
