Step by step

Preheat oven to 160°C, line a springform pan with parchment paper.

Crush biscuits finely and mix with melted butter.

Press crumb mixture firmly into the pan and chill 10 minutes.

Beat cream cheese with sugar until smooth.

Stir in eggs one at a time, then incorporate cream, vanilla extract, lime juice and starch.

Pour cheese mixture onto the base.

Bake in a water bath for 60 minutes — the center should still wobble slightly.

Turn off oven and cool cake with door slightly open for 1 hour.

Chill at least 4 hours, ideally overnight.
