    150 ml
  • Soy sauce

  • MirinOr: Sake
    ¼ tbsp
  • Chicken breastOr: Shrimp fresh

  • Shiitake mushroomsOr: Brown mushrooms

  • Spring onions

  • Mung bean sproutsOr: Soy sprouts

Method

Step by step

    Cut chicken into tiny cubes, briefly marinate with soy sauce.

    Slice mushrooms thinly.

    Whisk eggs gently without forming foam.

    Mix dashi with soy sauce, mirin and salt, strain into the eggs.

    Distribute chicken, mushrooms and sprouts among 4 cups.

    Pour egg mixture over.

    Seal cups with foil and place in a pot of boiling water (water halfway up the cups).

    Steam over low heat for 15–18 minutes until just set.

    Serve warm sprinkled with spring onions.
