- DashiOr: Dashi broth, Chicken broth150 ml
- Soy sauce¼ tbsp
- MirinOr: Sake¼ tbsp
- Chicken breastOr: Shrimp fresh25 g
- Shiitake mushroomsOr: Brown mushrooms1 Stk
- Spring onions1 Stk
- Mung bean sproutsOr: Soy sprouts15 g
- Iodized salt¼ tsp

Step by step

Cut chicken into tiny cubes, briefly marinate with soy sauce.

Slice mushrooms thinly.

Whisk eggs gently without forming foam.

Mix dashi with soy sauce, mirin and salt, strain into the eggs.

Distribute chicken, mushrooms and sprouts among 4 cups.

Pour egg mixture over.

Seal cups with foil and place in a pot of boiling water (water halfway up the cups).

Steam over low heat for 15–18 minutes until just set.
