- Beer 130 ml darkas needed
- Onions1 Stk
- BaconOr: Bacon cubes40 g
- Butter15 g
- Brown sugar½ tbsp
- MustardOr: Dijon mustard½ tbsp
- Apple vinegar½ tbsp
- Bay leaves1 Stk
- Thyme¼ tsp
- Flour¾ tbsp
- Beef broth60 ml
- Pain d'épicesOr: Gingerbread1 slice
- Iodized salt¼ tsp

Step by step

Cut beef into 4 cm cubes, salt, pepper and dredge in flour.

Render bacon in a heavy pot.

Sear meat in batches in the bacon fat and remove.

Cut onions into rings and fry golden brown in butter.

Deglaze with beer and broth, scrape up browned bits.

Add mustard, apple vinegar, sugar, bay and thyme.

Return meat and bacon to the pot, lay gingerbread on top.

Cover and braise over low heat for 2.5 hours.

Season the sauce and serve with fries or mashed potatoes.
