  • SpaghettiOr: Bucatini, Tagliatelle
    100 g
  • Pecorino RomanoOr: Parmesan
    40 g
  • Pepper 0.5 tsp coarse
    as needed
  • Iodized salt 0.25 tbsp for pasta water
    as needed
Method

Step by step

    Bring a large pot of salt water to a boil, cook spaghetti al dente.

    Finely grate pecorino.

  3. 3

    Toast pepper briefly in a dry pan.

  4. 4

    Reserve 1 cup of pasta water, drain pasta.

  5. 5

    Add 2–3 tbsp pasta water to the pan with pepper.

  6. 6

    Add spaghetti to the pan and toss.

  7. 7

    Remove pan from heat, work in pecorino while constantly tossing.

  8. 8

    Add more pasta water as needed for a creamy sauce, serve immediately.
