Step by step

    Place cream at room temperature in a tall bowl.

    Whip with a hand mixer at high speed until butter and buttermilk separate (about 8–10 min).

    Drain buttermilk through a sieve and reserve.

    Knead butter with cold water until the water stays clear.

    Squeeze out water well and combine butter with a pinch of salt.

    Shape, wrap in plastic film and let firm up in the fridge.
