Step by step

    Cook rice according to package.

    Finely chop onion, garlic and bell pepper.

    Heat olive oil in a pan, sauté onion and garlic.

    Add minced meat and brown crumbly.

    Add bell pepper, beans, corn and tomato sauce.

    Season with chili powder, cumin, salt and pepper, simmer 10 min.

    Briefly warm tortillas, fill with rice, mince mixture, cheddar, salsa and sour cream.
