Step by step

Peel and finely grate potatoes, do not squeeze out excess liquid.

Add flour, egg and salt and combine into a sticky dough.

Bring a large pot of salt water to a boil.

Press dough through a spätzle board or sieve with large holes into the boiling water in batches.

Cook halušky until they rise to the surface, about 3–4 minutes.

Remove with a slotted spoon and drain.

Render bacon cubes crispy in a pan.

Smooth-stir bryndza with a little sour cream.

Combine halušky with bryndza cream, top with bacon and chives and serve.
