  • Long-grain rice

  • Eggs

  • Carrots

  • Peas

  • Spring onions

  • Garlic cloves

  • Soy sauce

  • Sesame oil

  • Vegetable oil

Method

Step by step

    Cook rice the day before and chill (alternatively cook fresh and let cool).

    Cube chicken breast into small pieces.

    Cube carrots, slice spring onions into rings, chop garlic.

  4. 4

    Heat vegetable oil in a wok, sear chicken sharply and remove.

    Crack eggs into the wok and scramble, remove.

  6. 6

    Stir-fry carrots, peas and garlic in the wok for 3 min.

  7. 7

    Add rice and stir-fry for 5 min, return chicken and egg.

  8. 8

    Adjust with soy sauce, sesame oil and pepper, serve sprinkled with spring onions.
