Step by step

Slice beef tenderloin into fine strips.

Clean mushrooms and slice, cut onions into rings.

Sear tenderloin strips sharply in hot butter, remove.

Sauté onions and mushrooms in the pan, dust with flour.

Deglaze with broth and tomato paste, stir in mustard.

Fold in sour cream, season with salt and pepper.

Return tenderloin strips to the sauce, briefly warm through.
