- Red wine190 ml
- BaconOr: Bacon cubes50 g

- Pearl onions65 g
- Brown mushrooms75 g

- Beef broth80 ml
- Tomato paste½ tbsp
- Flour¾ tbsp

Step by step

Cut beef into 4 cm cubes and dredge in flour.

Render bacon cubes in a heavy pot and remove.

Sear meat in batches in the bacon fat and remove.

Dice onions and carrots and brown in the pot.

Add tomato paste and pressed garlic.

Deglaze with red wine and pour in broth.

Return meat and bacon to pot, add bay and thyme.

Cover and braise over low heat for 2.5 hours.

Add pearl onions and mushrooms sautéed in butter, simmer another 20 minutes.

Serve sprinkled with parsley.
