Ingredients

- Buckwheat flour40 g
- Wheat flour25 g
- Milk 100 ml lukewarmas needed
- Yeast dryOr: Yeast fresh1 Pck

- Butter 10 g meltedas needed
- Sugar¼ tsp
- Iodized salt¼ tsp

Step by step

Dissolve yeast with 100 ml lukewarm milk and sugar, let stand 10 minutes.

Mix both flours with salt.

Separate egg yolk from white.

Add yeast milk, remaining milk, egg yolk and melted butter to flour, stir smooth.

Let dough rest covered for 1 hour.

Whip egg whites stiff and gently fold into batter.

Heat a little oil in a pan, fry small pancakes (3–4 cm diameter), 1–2 minutes per side.

Serve topped with sour cream and smoked salmon.
