Method

Step by step

    Boil potatoes the day before, peel and slice.

    Cut bacon into strips and render crispy in butter.

    Add onion and leek, fry along.

    Add potato slices and fry until golden.

  5. 5

    Whisk eggs, season with salt and pepper, pour into the pan.

    Let set over medium heat.

    Serve sprinkled with chives.
