  • Wild garlic
    20 g
  • Water
    30 ml
  • Salt
    ¼ tsp
  • Nutmeg

  • Butter

  • Parmesan

Method

Step by step

    Wash wild garlic and finely puree with water.

    Beat flour, eggs, wild garlic puree, salt and nutmeg into a stiff dough.

    Let dough rest 30 min.

    Bring water to a boil and salt.

    Press dough through a spaetzle board into the water.

    Let spaetzle rise, lift out with a slotted spoon.

    Toss in butter and serve with Parmesan.
