Method

Step by step

    Chop onions and garlic, sauté in oil.

    Cube chicken, sear sharply.

    Add sweet potato and tomatoes.

    Whisk peanut butter with broth and pour into the pot.

    Season with ginger, chili, salt and pepper.

    Simmer 30 min, stir occasionally.

    Serve with rice and chopped peanuts.
