Method

Step by step

    Set up tafelspitz with soup vegetables, bay leaf and peppercorns in water.

    Simmer over low heat for 2–3 hr, skim off foam.

    Cook carrots, celery and leek in the last 30 min.

    Prepare apple horseradish or chive sauce.

    Take meat out, slice against the grain.
