Method

Step by step

    Preheat oven to 170°C, grease a springform pan.

    Melt chocolate over a water bath.

    Cream butter with half the sugar.

    Incorporate egg yolks one by one.

    Stir in melted chocolate.

    Whip egg whites with salt and remaining sugar to stiff peaks.

    Alternately fold meringue and flour into the butter mixture.

    Pour into pan, bake 50–60 min.

    Halve the cooled cake horizontally, fill and coat with warmed apricot jam.

    Cover with melted couverture, write inscription, serve with whipped cream.
