Step by step

Preheat oven to grill setting, grease springform pan and line with parchment.

Separate eggs, beat egg whites stiff.

Cream butter with sugar, stir in egg yolks one at a time.

Add vanilla extract, lemon zest and marzipan.

Mix flour, starch and salt and fold in.

Carefully fold in egg whites.

Spread a thin layer of batter into the pan and bake under the grill for about 3 minutes until golden.

Repeat 10–12 times until batter is used up — bake each layer until golden before adding next.

Let cool completely.
