  • Brown sugar

Method

Step by step

    Halve pumpkin, deseed, bake at 180°C for 45 min until soft.

    Scoop out flesh and puree.

    Work flour with sugar, salt and cold butter into crumbs, add water, quickly knead into dough, chill 30 min.

    Preheat oven to 200°C.

    Roll out dough, line a tart pan.

    Whisk pumpkin puree with brown sugar, eggs, cream and spices.

    Pour filling into the crust.

    Bake 15 min at 200°C, then reduce to 180°C.

    Bake another 35–40 min until center is slightly wobbly.

    Cool completely, serve with whipped cream.
