Method

Step by step

    Slice mushrooms, dice ham.

    Heat some butter in a pan, fry mushrooms 4 minutes, add ham.

    Whisk eggs with cream, salt and pepper.

    Clean pan, foam remaining butter.

    Pour in egg mixture.

    Stir constantly with a fork until eggs begin to set.

    Tilt pan, pull eggs to center so liquid flows to edge.

    Place mushroom-ham mixture and cheese on one half.

    Fold other half over.

    Let steep 30 seconds, serve sprinkled with chives.
